Friday is generally pizza night in our house; if you hadn’t already guessed, pizza is my absolute favorite food in the entire world and I just love closing out the work-week with a treat.
This particular pizza is one of my “old faithfuls,” as you can probably tell from the recipe archives (where there are at least four different mushroom pizza recipes), pizza + mushrooms = Marianne’s personal heaven (Gist, however, is a different story…) and the Moosewood Restaurant Cooks at Home is one of my oldest cookbooks – I have been making this particular pizza for at least 10 years!
Mushroom and Smoked Cheese Pizza
Recipe adapted from Moosewood Restaurant Cooks at Home
- Pizza crust
- 1 lb. mushrooms, sliced
- 1 tablespoon of olive oil
- Salt & pepper
- 1 tablespoon chopped fresh sage (or 1 teaspoon dried)
- 1 teaspoon of Dijon mustard
- 2 cups of grated smoked mozzarella
Preheat the oven to 550°. Sauté the mushrooms in the oil over high heat until they begin to release their juice. Add the salt and pepper, sage, and mustard and continue to cook until all of the liquid has evaporated. Top your pizza crust with the mushroom mixture and cheese. Bake until golden.

Hi, Marianne – I love pizza, too, and recently found a new crust recipe that is giving me a thinner pizza. (Thinner crust means ability to eat more slices!). Do you make your own crust?
