The weather this year is so different from last year and it has really made a difference in the amount of produce we’re receiving. This week we got:
- Garlic chives
- Kale
- Lettuce
- Arugula
- Summer squash
- Slicing cucumber
- Beets
- Spring onions
- Peaches
- Raspberries
Some of the arugula, beets and spring onions instantly became ABC (Arugula, Beets & Chèvre) Pizza.
This recipe was based on my earlier beet pizza recipe but I sliced the raw beets with a mandoline, tossed the chips with a bit of olive oil, and salt and pepper, and roasted them flat on a baking sheet topped with foil. The beet chips were tender but with a little caramelized crisp around the edges. I substituted arugula for beet greens, and spring onions for shallots.
The peaches and raspberries joined some farmers’ market blueberries in a crisp.
