World Peas CSA – Week One

Finally! YAY!

This week we got:

• Pea Tendrils
• Chinese Broccoli
• Swiss Chard
• Lettuce
• Garlic Scapes
• Radishes
• Mint (which I left in the swop box, my mint plant is double-OC)
• Strawberries
• And of course I picked up some milk at the dairy!

This year, for the first time,  World Peas is offering a small share which is what we signed up for.  This filled up the small (1/2 bushel) box pretty well, so I am interested to see what our yield is as the season progresses.

Slow-Cooked Vegetarian Boston Baked Beans

I love baked beans. I love them in the winter, when baking them in the oven warms the house, and in the summer, when using the slow cooker makes having them and a cool house a possibility. I love them served over brown bread and I love them at cookouts. They are delicious, but they definitely take planning.

Terrible Name, Tasty Dish

Easy, quick, pantry-friendly, and perfect for a weeknight. Oh, it’s reeeeeally delicious and makes great leftovers. What more could you ask for?

Mushroom Barley Soup

This is the best Mushroom Barley Soup I’ve ever eaten; if you love mushrooms like I do, it is heaven in a bowl!

English Muffin Strata

This right here is my go-to brunch dish. Easy, tasty and the bulk of the work gets done the night before; it’s so easy, I even served it on the day I got married!

Pasta with Roasted Brussels Sprouts and Hazelnuts

I love Brussels sprouts but Gist has long complained that she hates them. This recipe (and some prodding to actually try them from our pro-Brussels sprouts friends, Jill and Jason) convinced her otherwise.

Baked Shells with Winter Squash

This right here may be the perfect late fall/early winter dish – it’s seasonal, warm, comforting, and (most importantly) delicious. Oh, it’s also pretty easy too.

Apple Butter

I love this recipe. It’s easy and makes a deep, dark and rich apple butter. I was wondering what to do with the many, many, many CSA apples in the fridge when I stumbled across Lolly’s Food for Fall post – apple butter it would be!

Potato Leek Soup

I love potato leek soup – it combines all of the comfort and warmth of potatoes and soup, and what you’re left with is a big mug of win. It’s also a super-easy and quick weeknight meal, perfect for those cold fall and winter days when you just want to come home and curl up with your Snuggie and a good book…

Slow Cooked Black Bean Soup

Do you know what I’m lovin’ right now? My slow cooker!  It makes getting supper on the table after a long day of work a snap.  With a little prep, dinner’s ready to go when you get home.
